How To Bake The Perfect Madeleine

Madeleines were once all the rage at Versailles after Louis XV first bit into one sometime around 1755 and there was a Madeleine Paulmier whose name was given to these delectable sponge cakes, Or is it a biscuit?

Whichever, it’s delightful bite-size teatime treat which goes perfectly with a cup of tea.

We’ve got some great tips on how to create the perfect Madeleine. Using just sugar, flour, melted butter and eggs and a madeleine tray will take you to Proust’s heaven. Maybe add a little vanilla and some lemon zest. They are surprisingly easy to make so long as you follow your recipe carefully and hover by your oven door to make sure you take them out before they start to burn. If you’re a purist you wouldn’t dream of using one of those recipes using baking powder, but instead make sure your egg whites are whipped to the perfect point where they do all the raising for you. And don’t try to defy the order of things - the melted butter is the last thing to go in. Then take time to rest the batter, even overnight if you can.
